Mexican cuisine is a UNESCO World Heritage Site because it is an important example of food culture. They combine traditional cultivation, ritual customs and ancient communal preparation techniques. Cacti, for example, are not only processed into salads and jams, the perennial shrubs are used as host plants for the cochineal louse, which gives the Campari its red color or is used in lipsticks.
